While jambalaya is served on a bed of rice, with gumbo, you put the rice on top as it’s more of a stew consistency. While this takes the longest of all the Crosswinds Mardi Gras recipes, it also can serve 20 people, so it’s ideal for a big Mardi Gras celebration!
